Mint Oreo Cookies & Cream Popsicles

A super simple frozen dessert that comes together in minutes - perfect for sunny days and school holidays. Disclaimer: A serving of this recipe should be seen as a treat – best enjoyed occasionally as part of a balanced diet.
Ingredients
  • 1 x packet Mint Oreos
  • 1 x tin coconut milk (400ml)
  • 1 tbsp runny honey
  • 1 tsp vanilla extract
Instructions
  1. Set aside 5 Oreos. Place the remaining 9 Oreos in a plastic sandwich bag and bash with a rolling pin until you have a dusty mixture with some larger chunks of cookie.
  2. In a medium bowl, whisk the coconut milk, honey and vanilla until smooth. Stir in the crushed Oreos to combine.
  3. Pour a small amount of mixture into the bottom of five Popsicle moulds. Top each one with a single Oreo, then pour over the remaining mixture. Insert a wooden lolly stick into each mould then freeze until firm, at least four hours.
  4. When ready to serve, dip each Popsicle mould in boiling water for 5 seconds then unmould. Serve immediately.
  5. Popsicles will keep in the freezer for up to two weeks.
