When it comes to biscuits (of the British variety, not their soft, scone-like American counterpart), some brands do exactly what they say on the tin, while others are a little more elusive with their identity. Custard Creams are sandwiched together with – you guessed it – a layer of custardy cream, Jammy Dodgers filled with jam, and while their abilities to aid the breakdown of food may not be proven scientific fact, there is something soothingly simple about a plain Digestive biscuit that more than justifies its name.

Brown butter is a baker’s best friend. If I had a pound for every recipe I’d read extolling the virtues of this simple ingredient since I’ve been blogging, I’d be a very rich little loaf. Until fairly recently I’d always thought of it as a savoury thing, the foaming beurre noisette surrounding a piece of white fish or flavoured with sage and poured over pasta; I’m only just starting to understand the joy of stirring it into biscuits, cakes, cookies and muffins to ramp up the flavour and add to their intensity.

Chocolate, Caramel & Peanut ‘Snickers’ Layer Cake

Back in 2006, Anthony Worrall Thompson‘s ‘Snickers Pie‘ was labelled ‘one of the unhealthiest recipes ever published’ by the Food Commission. At a whopping 1,250 calories per serving and with no less than five super sweet chocolate bars chopped into it, this puff pastry crusted creation was cited as an example of chefs’ irresponsibility with regards to calorie control and our increasingly unhealthy attitude to what constitutes home baking.

Fellow food blogger Jamie Schler recently wrote this interesting piece for the Huffington Post bemoaning the wave of boxed brownie mix, chopped up chocolate bars and cans of frosting masquerading on blogs around the world as home baked treats. While I’m not averse to the odd Oreo crumbled into a blondie or topping a cupcake with fizzy cola bottles, I absolutely agree with her that baking should be about creating things from scratch. It may not make them calorie-free, but using real butter, free range eggs, seasonal fresh fruit and natural colourings in all my recipes is important to me and feels a world away from the oleaginous Worrall-Thompson’s sickly sweet idea of dessert. When was the last time someone responded badly to something you’d made?

In the kitchen, I tend to be my own worst critic. Although I enjoy cooking all sorts of savoury dishes, I definitely get the most joy out of baking and making desserts. And one major bonus that comes with being a baker is that your creations are almost always met with a rapturous response. While I’ll worry that something hasn’t turned out quite perfect, that the top is too brown or the middle less moist than I’d hoped, most of the time people have nothing but praise to impart when handed something sweet.

Maybe it’s an inherent insecurity which means I thrive on this praise, or perhaps conversely it’s some sort of overblown ego which makes me enjoy the eager eyes, nods of appreciation, squeals of pleasure and silent smiles of satisfaction, but the reaction of my friends and family to the treats I make brings me at least as much happiness as the actual processes of both baking and eating. This Saturday morning, the sun shining bright despite patches of cloud hanging heavy in the sky, I rolled myself out of bed and headed down to the farmer’s market. Although I love a lazy Saturday morning as much as the next person, there’s something so invigorating about the bustle of an early morning market and so satisfying about bringing home the freshest food to be eaten on the day it was bought that I just couldn’t resist.

On average, how many of your government recommended 5-a-day do you manage to eat?

Despite, or perhaps (in part) because of, my love of baking and this blog, I’m very conscious of getting my daily quota of fruit and vegetables. In the UK it’s fairly easy to stick to, with the government recommending a modest five 80g portions. However in Australia it’s seven, Spain eat eight and in Japan they suggest a staggering seventeen, although I’m guessing each serving size is slightly smaller than ours given that consuming over a kilo of even the most ambrosial fruit would be a struggle for most sensible human beings in any given day.

Spiced Chocolate Orange Mousse Cake

Chocolate is one of my favourite ingredients to bake with. Whether it’s chunked and studded through cookies, stirred into the smoothest mousse, melted over ice cream or baked into a dense, fudgy cake, chocolate is an ingredient reliable enough to be called on for comfort, yet versatile enough to always be exciting.

While chocolate and cocoa regularly make an appearance in my shopping basket, it’s rare that I’ll buy a bar to simply eat on its own. It’s not that I don’t like it, but I really enjoy experimenting in the kitchen and combining chocolate with other ingredients, making it into more of a meal or occasion than a snack straight from the packet. However there are two major exceptions to this rule when I (and a pretty a large percentage of the UK population) can’t seem to help but over indulge: Christmas and Easter. Continue reading

Hazelnut Praline Ice Cream

The first time I ate ice cream with alcohol in, it made me cry.

I was on holiday with my family in Italy, a much littler loaf than I am now, and we’d just emerged from eating lunch at our favourite local pizzeria. The kind of pizzeria with no pretensions, just incredible dough rolled paper thin, rich red tomato sauce spread over the top and milky mozzarella dotted between volcanic blisters of risen crust. By all accounts we should have been full, but anyone with even the slightest sweet tooth will understand that there’s full, and then there’s the pudding stomach.

Normally we’d have jumped in the car and headed up into the walled town to get a cone of homemade ice cream from one of the local bars, but for some reason or other we had to get on the road. If memory serves me correctly it was raining, so my Dad hot footed it into the next door café to grab a couple of cornettos for my brother and I to eat in the car 0n our way to wherever we were going. How many recipes have you made in your lifetime? How many more do you think you might still? And just how many are left languishing inside eagerly acquired cookbooks, on pages torn from magazines, on bookmark bars and Pinterest boards, never to see the light of day as you return to tried, tested and trusted recipes you’ve always enjoyed?

According to a poll commissioned by the Good Food Channel last year, the average British woman can cook just seven meals from scratch, with eighty percent admitting to churning out the same thing over and again, and only two percent turning to cookbooks or online for a source of inspiration. I don’t know about you, but as a member of that minority percentage, my problem is less how to get out of a cooking rut and more deciding what to make next from the ever-growing reams of recipe ideas accumulating in print, online and in my head.
