Chocolate Banana ‘Nice Cream’ with Blackberry Compote & Hazelnut Crunch (Vegan)

Chocolate Banana 'Nice Cream' - 5

Judging by all the gingerbread, peppermint, cranberry and brandy recipes that have been landing my inbox of late, this simple ice cream isn’t exactly on trend for this time of year. With no refined sugar, no dairy and an absence of alcohol, it’s possibly more suited to the New Year, New You party which rolls around with guilt-incuding speed just as you’re polishing off that Christmas selection box you found down the back of the sofa. But I’m posting it today because, despite its short ingredient list and surprising vegan credentials, this chocolate banana ‘nice cream’ tastes luxurious enough to serve alongside any more indulgent dessert as you celebrate the season.  Continue reading

Creamy Barley Breakfast Bowls with Hazelnuts & Figs

Despite a coupe of un-seasonally warm days, it’s starting to feel like autumn round here. My evening walk with Nino is bathed in hazy light, it’s dark by the time that supper swings round and those 6am wake up calls? Like the middle of the night. Comfort food feels like the order of the day and dark mornings call for warm breakfast bowls. Nino and I tend to share blueberry porridge made with flaked oats and quinoa, dolloped with thick greek yoghurt and a spoonful of nut butter, but this week I’ve branched out and made a batch of creamy barley to last us several days. Cooked until tender with homemade hazelnut milk and topped with honey roast figs, this nutty grain makes for a delightful porridge substitute and one I’ll be making time and again in the months to come. Dark Chocolate Brownies with Salted Panko Crunch

Dark Chocolate Panko Brownies - 5

We’ve just got back from a whirlwind weekend in Lithuania celebrating the marriage of two very lovely friends. I’m tired, but the lugging a pram down a hill to the picturesque lakeside dinner setting and getting up at 4am to feed a baby confused by the time change tired, rather than the slow lazy sleepiness that comes with daytime drinking and dancing into the night. Weddings with a mini man in tow are an altogether different kettle of fish, and the night before the big day I was in bed by 9pm, snuggling down into the duvet and ordering up chocolate cake on room service. Sweet & Salty Nori Popcorn

Sweet & Salty Nori Popcorn - 4

In a couple of weeks I’ll be half way through my maternity leave. While I appreciate that I’m extremely lucky to be able to take a whole year working on the project that is our delicious baby boy, I also can’t quite imagine the time when I’ll spend a whole day apart from him. The longest I’ve gone so far is four hours at the hairdresser, most of which were spent texting his babysitting Nonna (my Mum) for updates and photos and missing him madly. Six months from now he’ll be sitting, talking, possibly walking, eating real food and showing even more of that fabulous personality we’re seeing more glimpses of every day. Reflecting on how quickly things are changing truly makes me savour every second of these precious days.  Continue reading

Hot Cross Blondies

Hot Cross Blondies

With Easter just around the corner, my thoughts are turning to chocolate, spice and all things nice. My mother-in-law gifted us generous amounts of Hotel Chocolat goodies last weekend which have already been eaten (chocolate = perfect fuel for middle-of-the-night nursing), but luckily there’s a batch of these sweet, squidgy Hot Cross Blondies in our freezer. Mellow with warming seasonal spices, a kick of citrus and plump dried fruit, these blondies are the perfect afternoon tea treat for the long Easter weekend and can also be dressed up, warm, with ice cream for a decadent dessert.
