Seedy Coconut Granola

Sometimes it’s hard to tell the difference between a rut and a routine. Weekday toast or oats plus topping on repeat. Saturday pancakes. Sunday brunch. Meals which comfortably turn from favourites to familiar but run the risk of crossing that extra line towards boring.

In the interest of mixing things up, I made a big batch of granola for the first time in forever. It’s great for breakfast but also serves for snacking purposes. Luke swears by it as an after dinner mid-week treat. It’s as good on oats as ice cream and can adapt to infinite variations depending on what you have to hand.

Judging by all the gingerbread, peppermint, cranberry and brandy recipes that have been landing my inbox of late, this simple ice cream isn’t exactly on trend for this time of year. With no refined sugar, no dairy and an absence of alcohol, it’s possibly more suited to the New Year, New You party which rolls around with guilt-incuding speed just as you’re polishing off that Christmas selection box you found down the back of the sofa. But I’m posting it today because, despite its short ingredient list and surprising vegan credentials, this chocolate banana ‘nice cream’ tastes luxurious enough to serve alongside any more indulgent dessert as you celebrate the season.  Continue reading

One night last week I rocked our baby boy to sleep singing ‘Twinkle twinkle little star’ on an infinite loop, standing next to the tumble dryer because its continuous grumble was the only thing (besides my twinkly twinkles) that seemed to soothe his tired cries. We might have got Nino out of hospital, but that doesn’t mean we’re not now faced with all the usual problems that being the parent of a brand new baby brings. And as any tired parent knows, when you’re sleeping less and singing (bouncing, shhh-ing, swinging . . . you name it) more, an energy boosting breakfast you can quickly sling into a bowl one-handed becomes a very important thing. On 31st March 1979, my parents got married. One year later they returned home from work, tired and late, to discover a small pile of envelopes inside the front door. It was their first year anniversary and, while a few friends and family had posted little notes and celebratory letters, the pair of them had completely forgotten.

Until today, I thought this was unlikely to ever happen to me. I’m organised and I’m excitable, two traits which mean that when it comes to birthdays, anniversaries and celebrations, I’m always in there early. You know the girl who complains that her boyfriend completely forgot her birthday/Valentine’s Day/insert any other day designed to make our men look bad? Not me. I’m the one reminding him at least three weeks in advance then gleefully (and noisily) counting down to the celebrations day by day. Continue reading
